| Heirloom Tomato Salad with Turkey, Egg and Feta Cheese |

I made this salad with what I found in the fridge that day which really was not that much, but it turned out to be the most delicious dish: red and yellow heirloom tomatoes, red onion, hard boiled egg, 2 slices of low-sodium turkey breast and fresh basil leafs tossed with my Basic-8 dressing - so delicious!
Basic-8 Dressing (make first):
- 2 tbs good olive oil
- 1 tbs red wine vinegar
- 1/2 tsp honey
- 1/8 tsp real salt
- 1/4 tsp freshly ground black pepper
- 1/2 tsp Dijon mustard
- 1 pinch granulated garlic
- 1 pinch herbs de province
Cut all ingredients into about the same size cubes. It looks pretty and is easier to eat when all pieces are about the same size and shape.
2 small heirloom tomatoes, used different colors if you have them. If you tomatoes are larger simply use only 1/2 of a tomato.
- 1/5 red onion
- 2 slices of low-sodium turkey breast
- 1/4 cup feta cheese (If you buy a piece of feta rather that crumbled in a container, you can decide if you want to use it cubed or crumbled.)
- 1-2 hard boiled eggs
- 5-6 fresh basil leafs, chopped
Gently toss all the ingredients with your dressing and enjoy!
