Meatloaf and Roasted Asparagus
After seeing Martha on the morning show making meat loaf I thought this may be a great idea for dinner instead of beloved staple meatballs. I made little mini versions; got them started on the stove top, flipped them and finished them in the oven at 400F for about 20 mins. They turned out juicy and delicious.

Mini Meatloaf (ground sirloin, minced carrot onion celery, kosher salt, pepper, bread crumbs, egg, mustard powder; ketchup and mustard powder for the glaze)

Roasted Asparagus (asparagus, kosher salt, pepper; finish with lemon juice and grated parmesan)
