Crepes with Fruit in a Orange Spiced Syrup with Whipped Cream
I grew up with Crepes. My mom used to make stacks of them 5 inches high and we ate them all. Simply spread with any kind of jam, roll up and sprinkle with a bit powdered sugar. Delectable!


Ingredients: Crepes (makes about 12-14)
  • 3 large eggs
  • 1 3/4 cups whole milk
  • 2 tbs Triple Sec
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • vegetable oil for brushing the pan
Directions
Whisk eggs in a large bowl to combine. Whisk in milk, Triple Sec, and salt. Gradually add the flour and blend well. Set aside and let rest for 1 hour.

I did not make any Crepes for a long time, because I did not have a good pan. You need a good nonstick pan - I have a Scanpan and love it. It is also great for fish.

Heat your nonstick pan over medium-high heat. Brush with a little vegetable oil and add 1/3 - 1/4 cup of the batter and quickly swirl it around the pan. If you are not able to coat the pan and the batter looks a bit too thick, just add a little more milk and whisk well. Expect the fist 2 Crepes not to turn out.

Cook the crepes for about 1 minute on the first side. When you see the outer edge get brown and crisp flip the crepe with the help of a rubber spatula and cook for about another 30 seconds. Transfer to a plate, lightly brush the pan with oil, etc. until all the batter is gone.

Spread a bit of jam or Nutella on the crepe, fold or roll up and enjoy.

Ingredients: Orange Spiced Syrup
  • 1/2 jar or orange jam/marmalade (I like the one from IKEA of all places)
  • 1 tbs water
  • 1/2 cinnamon stick
  • 1/2 vanilla bean, cut open
  • a few strawberries, honeydew melon balls, orange or other fruit of your choice like raspberries and blueberries.
Garnish
  • powdered sugar
  • whipped cream
  • mint sprig
Directions
In a small pot heat the jam, water, cinnamon stick and vanilla bean. Gently simmer for a few minutes. Remove from heat, discard vanilla bean and let cool.

When the syrup has cooled down to room temp add the fruit, stir to coat and let sit for a few hours. When ready to serve gently warm the syrup and fruit just to take the chill out.

Assemble
Warm your plates. Fold crepes in half, and then in half again. Arrange on the plate, spoon on the fruit syrup, sprinkle with a bit of powdered sugar and add a dollop of whipped cream. Garnish with a sprig of mint (unfortunately I did not have one).
