| Yam Chips, Mixed Greens Salad, Turkey Sandwich. |
Kurt (my guy) can't eat a sandwich without 'salt & vinegar' chips, but tonight I had one yam left in the fridge and there is really not much you can do with one . . . except chips. And let me tell you they are yummy! BTW, if you are wondering if have take a bit off that turkey sandwich in the background you are right. I was so hungry I could not help it.
Ingredients: Yam Chips
- 1 or 2 yams, peeled and thinly sliced
- olive oil
- real salt and pepper
Yam chips are easy to make. Pre-heat the oven to 350. Peel the skin and thinly slice the yam(s). Drizzle the slices with a little bit of olive oil and spread them out on a non-stick cookie sheet in a single layer. Sprinkle with a little bit of real salt and fresh ground pepper. Bake for about 10 minute, flip the chips and bake for another 5-10 minutes until crispy. Keep an eye on the chips - they tend to burn easily.
The salad in the picture is made from whatever was left in the fridge and my Basic-8 recipe and a simple turkey sandwich with my sunflower bread.
