Tuna Salad on Fresh Baked Sunflower Bread

Tuna Salad on Freshly Baked Sunflower Bread.

Tuna salads are great for sandwiches. I like mine with just a little bit of dressing and not drowned in mayo.

Basic-8 Dressing (make first)
Follow the Basic-8 recipe, but substitute the following:
  • 2 tbs good olive oil or 1 tbs olive oil and 1 tbs Hain sufflower mayo
  • 1 tbs lemon juice
  • 1/2 tsp honey
  • 3 pinches real salt
  • 5 turns on the black pepper mill
  • 1 tsp whole grain Dijon mustard
  • NO granulated garlic
  • NO herbs de province
Tuna Salad on Fresh Bread
Salad Ingredients (2 servings)
  • 2 6 oz can tongul tuna (white) in water, no salt added
  • 1 radish, finely diced
  • 1 medium celery stalk, finely diced
  • 1-2 green onions, finely sliced
  • 2 tbs red onion, finely diced
  • 1 tbs flat leaf parsley, finely chopped
Put it Together
Simply combine all the ingredients and let sit for about 15 minutes in the fridge. I like my tuna salad cold on a fresh slice of bread. This is a great summer dish, especially with a few slices of vine ripened (heirloom) tomato.
