Mixed Greens and Vegetable Salad

I guess I'd call this my 'staple' salad: Basic-8 dressing, mixed greens, a few vegetables and a sprinkle of nuts and seeds. It is such a basic but delicious salad - you can serve it with anything. And whatever veggies you have slice them in the salad. Just don't over do it - a little bit does the trick.

Mixed Greens Salad with Vegetables - this salad goes great with anything!

Basic-8 Dressing (make first)
Follow the Basic-8 recipe, but substitute the following:
  • 2 tbs good oil olive
  • 1 tbs red wine vinegar
  • 1/2 tsp honey
  • 3 pinches real salt
  • 5 turns on the black pepper mill
  • 1/2 tsp whole grain mustard (Trader Joe's)
  • 1 pinch granulated garlic
  • 1 pinch & crumb herbs de province
Salad Ingredients (2 servings)
  • 3-4 leafs green leaf lettuce, depending in the size
  • handful of mixed greens
  • 1/2 small red or yellow pepper, sliced
  • a bit red onion, thinly sliced
  • 1/2 carrot, sliced
  • 1/2 celery stalk, sliced
Add Sprinkles (about 1 tablespoon for all sprinkels combined)
  • sunflower seeds
  • pepitas
  • sliced almonds
Make it a Meal with Whole Wheat Pasta and a Simple Bolognese
This simple salad is my staple and goes pretty much with anything. I happen to make a simple beef bolognese and served it with whole wheat pasta. Delicious AND healthy.
