The Simplest Carrot Salad

Carrots and nothing else are in this delicious salad.
Sometimes I happen to have nothing but a bunch of carrots in my fridge - doesn't happen often, but when it does it is a good idea to have a recipe that uses nothing but carrots - and it is GOOD!

Basic-8 Dressing (make first). Serves 2.
Follow the Basic-8 recipe, but substitute the following:
  • 2 tbs good olive oil
  • 1 tbs pear infused white Balsamic vinegar
  • 1/2 tsp honey
  • 1/8 tsp real salt
  • 5 turns on the black pepper mill
  • 1 tsp whole grain Dijon mustard
  • NO: granulated garlic 
  • NO: herbs de province 
  • ADD: 1 tsp poppy seeds
  • ADD: 1 tbs mixed dried fruit (apple, pear, raisin, fig), finely diced 

Salad Ingredients 
3-4 carrots, depending on the size, grated. Try a mix of yellow and orange carrots.


Put it Together
Simply combine the dressing with the grated carrots, toss and you are done.

 Make it a Meal 
 Chicken breast seasoned with real salt and black would be a good addition to this simple and inexpensive, but healthy and delicious dinner.
