For this dish I used some left-over simple bolognese sauce which would have otherwise not been enough for 2 people.

Spaghetti Bolognese with Cappicola and Mushrooms (olive oil, sliced mushrooms, onion small dice, kosher salt, pepper, chopped parsley, chopped cappicola, chicken stock, plain tomato sauce, left-over bolognese, garnish with grated parmesan and chopped parsley)

This dish was so savory and hearty - perfect if one has one a can of white beans, a little tomato, some kind of Italian ham and chicken. Yum!

Pan Roasted Chicken Breast (chicken breast, kosher salt, pepper, dried thyme, olive oil)

Great Northern Beans and Cappicola (olive oil, onion, kosher salt, white wine, fresh thyme, great northern beans, cherry tomatoes, cappicola, chicken stock, minced garlic, little beurre manie)

Capicola and Melted Tomatoes Spaghetti

Capicola and Melted Tomatoes Spaghetti
This is such a perfect sauce. It combines the sweetness of the tomatoes with the savoriness of the capicola. You can also use prosciutto or salami if you don't have capicola on hand.
Melted Tomatoes (olive oil, cherry tomatoes (halved) or diced tomatoes, kosher salt, dried oregano) - cook on low heat until desired consistency has been reached.

Capicola and Melted Tomatoes Sauce (olive oil, onion small dice, minced garlic, chicken stock, chopped capicola, melted tomatoes, black pepper, grated parmesan, chopped parsley) - toss with al-dente spaghetti.
