Rosemary-Dijon Pork Tender Loin, Green Beans, Pasta Salad
Pork Tender Loin is inexpensive and so easy to make. Be sure not to overcook pork - it can dry out easily. These days pork is served on the pink side.

Pork Tender Loin.
Rosemary-Dijon Pork Tender Loin (kosher salt, pepper, Dijon mustard, fresh chopped rosemary, little lemon juice, olive oil) - generously apply marinade and let sit for 30 mins at room temp. In a stainless pan sear all sides until browned and finish at @ 375F for ~ 17-20 mins. Let rest covered for 5 mins before cutting.

Green Beans (blanched in salted water, finished in pan with olive oil, kosher salt, pepper, and lemon juice, sliced almonds) - heat a little olive oil on high heat; add blanched green beens, kosher salt and pepper and toss quickly just to heat. Finish with a little lemon juice and sliced almonds. Be sure the green beans are fairly dry, otherwise the water will splatter in the hot oil.

Pasta Salad Dressing (olive oil, red wine vinegar, honey, kosher salt, black pepper, dried thyme, Dijon mustard, chopped parsley, little water) - toss with al-dente pasta chopped tomatoes, sliced red onion, and sliced cucumbers (cored and halved) and let sit at room temp. for 20-30 mins - stir occasionally.
Pasta Salad with tomatoes, cucumber and red onion.
