Tomato-Bacon Bolognese
- Render the bacon pieces in a little olive oil until starting to brown; do not crisp:
- olive oil
- 3 bacon slices, trim large pieces of fat, small dice
- Add onion, thyme, and salt and sweat until transparent
- yellow onion, small dice
- kosher salt
- fresh thyme
- Increase heat, add ground beef. Cook until meat is cooked through:
- 1 lb ground sirloin
- Add tomatoes and sauce:
- 14 oz can fire roasted tomatoes (TJs)
- 28 oz diced* tomatoes or tomato sauce (TJs)
- Season and gently simmer for at least 30 minutes:
- 2 cloves garlic, minced
- kosher salt
- pepper
- sugar
- dried thyme
- Garnish with:
- grated Parmesan
- chopped parsley
Serve with al-dente Spaghetti. Garnish with grated parmesan and chopped parsley.
*If you don't have tomato sauce simply use a food processor or immersion blender to make tomato sauce out of whole or diced canned tomatoes.
