I used a Tex-Mex seasoning I had on hand, but you can use any spice mix or just salt, peeper and paprika. Blanche the broccoli in salted water, set aside. Cook the chicken, set aside; reuse the pan to saute the tomatoes. Then simply add the chicken and the broccoli to the tomatoes to warm through for a couple of minutes, toss with pasta, add a little reserved starchy pasta water if too dry, maybe add a little pad of butter for extra gloss and dinner is served.

Tex-Mex Chicken (marinate bite-size chicken in Tex-Mex seasoning, kosher salt, pepper, lemon or lime juice; saute in olive oil)

Sauce (use 'chicken' pan, degrease, olive oil, halved cherry tomatoes, kosher salt, pepper, chicken stock, chopped parsley, starchy pasta water to thin sauce)

Broccoli (blanche in salted water)
